6 quick harvest snacks

Chili-corn snack mix 

Ingredients:

1 tablespoon canola oil

1 tablespoon lime juice

1 teaspoon chili powder

2 cups toasted high-fiber corn cereal and/or crispy corn and rice cereal

1 cup tiny pretzel knots

1/2 cup whole almonds

1/4 cup dehydrated corn kernels

1/4 cup snipped dried apricots or whole dried cherries

Step 1: In a large skillet heat oil, lime juice, and chili powder over medium heat 30 seconds. Add cereals, pretzels, and almonds. Cook 4 to 6 minutes or until cereal and almonds are very lightly browned, stirring frequently.

Step 2: Remove from heat. Stir in corn and apricots. Spread mixture on foil to cool. Makes 8 1/2-cup servings.
