In honor of National Raisin Day on April 30, it's fitting to give these sun-dried treats a little recognition for the health benefits they offer your diet.
Eating raisins on a regular basis promotes good dental health -- it prevents tooth decay and brittleness of teeth. And because they contain vitamin A, beta carotene, and carotenoid, raisins can help prevent cataracts and macular degeneration.
Preparation: 10 minutes
Bake: 375 degrees F. for 25 minutes
2 cups all-purpose flour
1/2 cup packed light-brown sugar
1/2 cup granulated sugar
1 tablespoon baking powder
3/4 teaspoon salt
1/4 teaspoon ground allspice
1 cup quick-cooking oatmeal
1/2 cup raisins
1/2 cup chopped walnuts
1 egg
1-1/4 cups milk
1/3 cup vegetable oil
1 teaspoon vanilla extract
Quick-cooking oats (optional)
Step 1. Heat oven to 375 degrees F. Coat 12 muffin cups with nonstick cooking spray.
Step 2. In a large bowl, whisk together flour, brown sugar, granulated sugar, baking powder, salt, and allspice. Stir in the 1 cup oatmeal, raisins, and nuts. In a medium-size bowl, lightly beat egg. Stir in milk, oil, and vanilla to combine. Stir gently into flour mixture; do not overmix.
Step 3. Fill muffin cups two thirds full. If desired, sprinkle with additional oats. Bake at 375 degrees F. about 25 minutes or until golden on top. Remove to wire rack and let cool. Makes 12 muffins.
